Meet Corwin

Since college, I've enjoyed cooking. I'd cook for family, friends, neighbors and coworkers, I was always experimenting. A few years after graduating I moved to Cleveland and rented an apartment on the same block as the Westside Market, an institution in itself. I had access to nearly every type of meat, vegetable, fruit and spice. The experimenting continued. And then I got a smoker as a gift; I haven't looked back.

    The Dry Rub

    Putting a brisket on the smoker became my thing. So I started experimenting with different spices and created a rub that represents me, a flavor profile that speaks to my West Indian and Southeastern, Virginia DNA - something a little sweet, with a little heat.

    After years of being told "you need to sell this". After years of avoiding the risks and fears, after life-changing events, and after a health scare and being laid-off, I'm happy to share a part of me. So here it is - Flake's Dry Rub.
